Fruit Juice Popsicles
I know its pumpkin season, not Popsicle season but my kids love to eat Popsicle outside as a little treat. Since it’s has been an amazingly warm Fall here in the Midwest, we are still able to do that. I just picked up some simple Popsicle molds, and made some homemade fruit popsicles with just 2 ingredients that I had at home.
I used a few frozen strawberries that I had leftover. I thawed and cooked them down on the stove until they were soft. I added a little bit of cranberry juice that I had for some extra liquid. When the strawberries were soft, I let them cool and used mystick blender , which is one of my favorite kitchen tools, to blend everything up. I poured the mixture into the molds, adding extra juice if needed. I don’t have any measurements for this recipe because it really depends on the molds that you are using. I noticed that it really took a lot less than I expected. When I noticed that I only had 7 frozen strawberries left I didn’t think that it would be enough, but it was. So, this is a great recipe for using up the bits of fruit that you have leftover.
These Popsicles turned out great and the kids loved them. I have an extremely picky eater so I was happy to see her enjoying a popsicle that was mostly fruit. It was the first time I used these molds and I was very happy with how easy they are to use and clean!
