I have another quick go-to chicken sausage skillet recipe that I love! I am seeing a theme here as I post more recipes, they are all easy! But I guess as a Mom, that’s what you want most pretty much all the time. I usually try to prep this earlier in the day. I peel and cut the sweet potatoes and peppers so I can start cooking right away in the evening. I usually try to use 2 different colored peppers when I make this but today the green pepper were on sale so that’s all we have.
So this is a simple skillet recipe. I usually serve it over brown rice but of course that is optional. I am just going to jump right in to the recipe and keep everything quick & easy.
What you need:
1 package of chicken sausage (I prefer the sweeter apple variety, but you can pick whatever you like)
1 large sweet potato
2 peppers (any color you prefer)
1 cup frozen corn
1/2 chopped onions (use my kitchen hack)
seasoned salt and pepper
How to make it:
- Put olive oil in a skillet and add the sweet potatoes first, because they take the longest. I also prefer mine a little more on the done side.
- Next add the pepper and corn and let them soften for a few minutes.
- add the sliced chicken sausage, if you have the precooked ones.
- Add a bit more olive oil for flavor and then some seasoned salt & pepper. Serve over rice.
