An Easy Side Dish
I have this great side dish recipe for Parmesan Orzo Pasta. It’s quick and easy for a week night. I have been making it a lot lately this summer because it pairs well with all things grilled and of course because its easy. I try to have all the ingredients on hand all the time. In fact, I have a great kitchen hack that I do for Orzo. When I buy a carton of chicken stock, I freeze the leftovers into measured out freezer bags. That way, I always have some ready to go. I usually don’t even take the time to thaw it out. I just throw the frozen chicken stock into the simmering pan and it turns out great.
Here is what you need to make Parmesan Orzo:
- 1 Tablespoon Butter
- 1 Cup Barilla Orzo Pasta
- 1 1/4 cup Chicken stock (I normally use my freezer bag, which is already measured out)
- 1 1/4 cup Water
- 1/4 cup grated Parmesan Cheese
- 1 Tablespoon dried basil, or fresh basil if you have it on hand
- salt & pepper to taste
You want to heat and melt the butter in a saucepan over medium heat. Add the Orzo and stir constantly. Cook for 3 minutes or until the Orzo gets a little toasted. Stir in water and chicken broth, frozen or thawed, and bring to a boil. Reduce heat and simmer until all the liquid is gone, which is usually about 15 minutes. Turn the heat to the lowest it can go and add the cheese, basil, and salt & pepper. Parmesan Orzo is best when served immediately.
