During the week, like most moms, I don’t have a lot of time to make dinner. I discovered a quick and easy way to make stuffed peppers. During nap time (hopefully there is a nap time that day)I prep the filling and cut and boil the peppers. When it is time for dinner, all I have to do is heat up the stuffing, stuff, and pop in the boiler for a few minutes. It makes for a quick and delicious week night meal. I use a box of Dirty rice, or New Orleans style rice. That’s what makes this stuffed peppers recipe a shortcut.
Here is what you need to make these delicious stuffed peppers:
A box of dirty rice mix. Any variety that you like
a can of diced tomatoes
1 pound ground beef
1/2 cup frozen diced onions
4-6 green peppers, depending on size
I usually fry up the ground beef and onions while the rice is cooking. After the meat is cooked and drained, I add it to the cooked rice. Add a drain can of diced tomatoes and mix. Now, if I am prepping this ahead of time, I will put it in the fridge until it time to warm it up for dinner. I also cut the tops off the peppers and clean out the insides. I boil them in some water but only for about 5 mins. You don’t want to overcook the peppers so they are soft. You want to keep them a little firm so they don’t fall apart when you stuff them. If you are cooking then later, put them into the fridge until you are ready.
When it is time for dinner simply warm everything up and stuff the peppers with the filling. I usually just let the peppers sit out for 20 mins so they are not that cold, and then they heat up in the broiler. Add a piece or 2 of Mozzarella cheese to the top and broil for a few minutes until the cheese is melted.
