I was experimenting last week with ways to switch up tacos and use my crock pot. I made this easy Crock Pot Taco recipe that the family loved. Let me start by saying that I am not a chef and I do not take a lot of risks when it comes to food. I am a Midwest girl that grew up on casseroles and meat from the grill, and I love it! But lately I have been thinking of ways to enhance our already developed weekly menu. I came up with this quick concoction while I was digging through the freezer. It is my version of a corn Salsa.
All I did was put a little bit of olive oil in the pan with some frozen corn and frozen chopped onions. I browned them up a little and then added some black beans to make a little corn salsa topping for the tacos. I was excited about this delicious and healthy topping for tacos.
These frozen onions are my little kitchen hack. I swear these onions are so much easier than buy and cutting up an onion all the time. They are less work and less tears. The freezer usually has a bag or 2 in it all the time.
I made shredded chicken for the meat I added about 2lbs of boneless chicken breasts to the crock pot with taco seasoning and about a half of a jar of salsa. I cooked it for about 7 hours on low. It really was that easy, you can’t mess it up.
